Dan has had a love and deep connection to food ever since he was very young. Cooking talent runs very scarce within his family; however his grandmother Celeste was the exception. From scratch made pastas to multi-tiered wedding cakes, she quickly became his greatest inspiration to become a cook. The love and attention that she put into each of her dishes was unparalleled, and over the years her philosophy for simple and well executed food pushed Dan to pursue a culinary career.
After graduating high school, Dan moved to the East coast where he attended Johnson & Wales University. There, he graduated in top of his class earning both an Associate degree in Culinary Arts and Bachelors degree in management and finance. Before long, he found himself back in Chicago where he gained the majority of his cooking experience. For a number of years, he worked in everything from bakeries and pastry shops, to fine dining, to event catering.
